Lady Apples or Any Petite-Sized Apple

Apple Cider

c
Light Brown Sugar

Dates, Chopped Into Small Cubes

Oz
Brie Cheese, Chopped Into Small Cubes

Golden Raisins, Soaked in Brandy, Drained
to taste
Kosher Salt and Freshly Ground Black Pepper
As needed
Belgian Endive Leaves, Julienned

Heat oven to 350 degrees F. Cut a thin slice off the top of each apple. Scoop out the cores and discard. Place the apples in a baking pan and cover evenly with cider and brown sugar. Roast in the oven until tender, about 45 minutes.

Meanwhile, combine chopped dates and Brie with raisins. When apples are roasted, stuff each with filling. Sprinkle with salt and pepper; bake until cheese melts down, about 10 minutes. Serve warm with Belgian endive salad dressed with date vinaigrette.
