Rice bran oil

Brussels sprouts, cleaned, halved, scored

Ginger

Garlic

Scallions, chopped

Thai chile, chopped

Brown sugar

Rice wine vinegar

tbs
Thai fish sauce

Juice of lime

Thai basil, to garnish

Cilantro, to garnish

Chopped peanuts, to garnish

Heat pan on high, add oil, add sprouts and caramelize, 3 to 4 minutes. Add aromatics, and toss. Add brown sugar and vinegar, and let it get syrupy, about 30 seconds. Add lime juice and fish sauce, toss, and cook until sticky and glazed, about 30 seconds. Garnish with herbs. Even top with chopped peanuts.
