Tristar strawberries

Black vinegar
As needed
Salt

Char strawberries on a grill or in a very hot cast-iron pan. Place in a bowl and cover with plastic wrap; let steam and further breakdown in a warm place for 1 hour.

Uncover and squeeze strawberries with your hand until a rough jam forms. Season with black vinegar, salt, and sugar to taste. (Keep jam tart and not too sweet.) Reserve until needed.
